Robin Bowie the proprietor initially entered the catering trade via a Hotel Management Course, which was followed by a year spent in Bordeaux. This year was to invoke a passion for fine wines and foods that strongly influenced his style and standards in the years to come.
His chefing career was to flourish as Head Chef at "Skipper's Bistro". He was a key player in establishing this new style of restaurant eating in Leith from its early beginnings in 1979. He then became involved in the inception of the "Waterfront Wine Bar" as a Chef / Director in 1982 for a period that was to span 16 years. During that period he also established " Le Marche' Noir" in Eyre Place which he was to run for three years.
